Our Story

Real Food. Restaurant Standards. Zero Gut Heavy Bloat.

We believe small-batch isn’t just better—it’s the only way pasta actually respects your body and your table.

Most conventional, mass-produced grocery store pasta has had the life cooked out of it. Corporate factories flash-dry commercial dough in industrial ovens at extreme, scorching temperatures ($180^\circ\text{F}$ to $240^\circ\text{F}+$) in just two hours purely to maximize factory turnover.

That shortcut bakes out natural flavor, turns delicate wheat proteins into an indigestible, rubbery lattice, and leaves you sluggish on the couch with a heavy brick in your gut.

Frankly, it’s an insult to honest cooking.

DSM Pasta Co. was born out of a total refusal to settle for that mass-produced shelf filler. We replace corporate assembly lines with patient, low-temperature slow drying, small-batch bronze-die extrusion, and an uncompromising standard of culinary craft.

40+ Years of Hospitality Leadership. Zero Corporate Shortcuts.

So, who are we?

We’re an executive chef and a hospitality veteran who have spent our entire lives living, breathing, and leading high-volume restaurant operations.

With over 40 combined years running kitchens, commanding dining rooms, and obsessing over the guest experience, this isn't a hobby—it’s our life’s work.

  • The Chef brings the back-of-house culinary obsession: scratch technique, dough hydration, bronze-die extrusion science, and zero tolerance for shortcuts.

  • The Hospitality Veteran brings the dining room standard: the core belief that dinner isn't just fuel—it’s an atmosphere where people crowd around a table, pour way too much wine, and connect over food that commands respect.

We reached a breaking point where we knew we had to rescue that old hand-crank pasta machine from the pantry and put it to work. After countless late-night tasting sessions at our own kitchen counter, DSM Pasta Co. was officially unleashed on Des Moines—and is now shipping to dinner tables nationwide.

What Makes Our Pasta Different

1. Traditional Low-Temperature Slow Drying

We don't scorch our dough in industrial ovens. We dry our pasta slowly at gentle temperatures over days. This preserves the natural wheat structure, unburned starches, and living flavor profile—delivering a clean, effortless digestion with zero post-meal food coma.

2. Authentic Bronze-Die Extrusion

Mass-produced commercial pasta uses slick Teflon dies that create slippery, plastic-smooth noodles that shed sauce like water off a raincoat. We extrude through traditional bronze dies to create a coarse, sandpaper-like micro-texture engineered to grip every drop of sauce.

3. Pure, Simple Ingredients

100% durum semolina and water. No artificial enrichments, no chemical shelf-stabilizers, and zero corner-cutting. Just real food crafted by restaurant veterans who refuse to settle.

Our Core Mantra: EAT REAL CARBS.

We aren't just shipping pasta in bags; we're supplying the centerpiece for an evening that actually feels special.

Food should be a sensory rebellion against the mundane. We craft scratch-built, bronze-extruded pastas engineered to force people to slow down, crowd around a table, pour another glass of wine, and feast on real carbs that actually love you back.

Ditch the mass-produced shelf filler. Welcome to the table.
